First is pies, two pumpkin, apple (with maple leaf cut-outs of the crust, pretty and festive right?), and pecan pie with the cream cheese crust. Those pies are project no. 65. This was around Thanksgiving, but still counts, right? Too bad, counting it! I feel like a rebel!
Second is the second sock to the pair for dad (NYRP #56).
Third is my mini-cheesecakes:
12-18 vanilla wafers
around 16-20 oz of softened cream cheese
1/2 cup sugar
1 1/2 - 2 tsp. vanilla
Line muffin tins with foil liners.
Place one vanilla wafer in each liner. Beat cream cheese, add sugar and vanilla, beat till well mixed (feel free to taste a bit!). Add eggs. Mix well. Pour over wafers, filling 3/4 full. Bake 25 mins at 325.
Remove from pan when cool. Chill. Top with fruit, preserves, nuts, and/or chocolate- be creative!
